Ingredients:
- 1 scoop vanilla protein powder
- 1/4 cup egg whites
- 1/4 cup cottage cheese
- 1 tsp baking powder
- Optional but makes it better: cinnamon
Add ons:
- fruit (my favorites to add are blueberries and strawberries)
- syrup
- nut butter (i use almond butter)
Directions:
- Heat a small/medium pan over medium or medium low heat (depends on your stove)
- Mix everything in a small bowl
- Pour the batter onto the pan to make the pancakes as big as you want (I usually make 2 medium sized ones)
- Flip the pancakes after a minute or 2 when the bubbles come through the pancake
- Top with your choice of toppings
- Eat!
The cottage cheese makes these pancakes fluffier and the egg whites act as a great binding agent. All 3 ingredients are packed with protein. If you don’t like cottage cheese, don’t worry, you won’t taste it at all.
I would put the Macros but they are so variable with this recipe depending on what brand of ingredients you use. In general, these pancakes will be very low-carb and high protein.
